Fish loin in sous vide with citrus and spices. Fine herbs marinate with olive oil and serrano chili.

Ingredients:
300 grs fish loin sea bass, horse mackerel
2 stalks of coriander
1 stalk mint
1 roasted jalapeño
1/2 piece of roasted purple onion
100 ml lemon juice
1 roasted garlic
Salt
Pepper

Procedure:
1. Clean the fish loin and cut it even. Put half of the lemon juice with it. Add salt and pepper. Let it set 20 minutes and move eventually.
2. To prepare the sauce, add the coriander, the mint, the jalapeño, the purple onion, the garlic and the rest of the lemon juice to blend until smooth. Season it with salt and pepper.
3. Serve with chopped onions and jalapeño.
